Sugar snap peas make for a sweet and crunchy salad that keeps a firm texture before serving, making it an excellent potluck dish. This salad can accompany almost any meal.

Equipment Needed

  • Medium mixing bowl
  • Cutting board
  • Knife
  • Measuring cups
  • Measuring spoons
  • Salad spoons or ladle to stir and serve


  • 1 bag fresh sugar snap peas
  • 1 yellow bell pepper (seeded and cut into bite sized pieces)
  • 1/2 bag radish (ends removed and cut into slices)
  • 1 stalk celery (chopped)
  • 1 1/2 tbsp extra virgin olive oil
  • 2 tbsp white balsamic vinegar
  • 1 slice fresh lemon, squeezed
  • 1 slice fresh lime, squeezed
  • 2 tablespoons green onion, finely chopped
  • 2 tbsp red onion, finely chopped
  • 1/4 cup feta cheese, crumbled


  1. Prep all veggies as described above and combine in medium bowl
  2. Pour olive oil, white balsamic vinegar, lemon and lime juice over veggies
  3. Crumble feta cheese over all ingredients (add last to keep form)
  4. Stir or toss and cover
  5. Can be refrigerated overnight or served immediately
  6. Keep chilled prior to serving
  7. Enjoy!
