Quick Mango Salsa
This is such a simple but delicious combination of ingredients. This salsa tastes great served over slow cooker pulled curry chicken and vegetables, scooped onto some plain yogurt, over a salad or in a mixed bowl with a roasted chicken breast and some rice, quinoa or other whole grain. Occasionally I will even have a little bowl of mango salsa with my eggs in the morning!

Equipment Needed:
- Medium mixing bowl
- Knife
- Cutting board
- Spoon
Ingredients
- 2 fresh mangoes (washed, peeled and cut)
- ½ green bell pepper (seeded and diced)
- ½ red bell pepper (seeded and diced)
- ¼ large red onion (peeled and finely chopped)
- ¼ cup fresh cilantro (fresh parsley will also work)
Instructions
Wash, peel and cut mango into ½ inch cubes
Seed and dice peppers into ½ inch cubes
Peel and finely chop the red onion
Chop cilantro to desired size
Place mango, peppers, onion and cilantro into a medium mixing bowl
Slice the lime in half and use a citrus press or hand squeeze the fresh juice over everything in the bowl
Stir and ensure everything is well coated in lime juice
Cover and place in fridge overnight. Give it a good stir before serving.
